Zesty Wheat Berry Black Bean Chili from Sunshine

Zesty Wheat Berry Black bean Chili


2 T. olive oil

1 large yellow onion, chopped

1 large yellow bell pepper, chopped

5 cloves garlic, minced or pressed

2 t. chili powder

1 ½ t. ground cumin

1 t. dried oregano

½ t. salt

½ t. ground pepper

2 15 oz cans black beans, drained and rinsed

2 14 oz no salt added diced tomatoes, undrained

1-2 chipotle peppers (canned in adobo sauce….look in mexican food section) minced

2 c. vegetable broth

2 t. light brown sugar

2 c. cooked wheat berries (find in health food store)

Fresh Cilantro

Avocado


Heat oil and sautee onion, bell pepper, garlic, chili powder, cumin, oregano, salt and pepper until vegetables are tender (about 5 min). Add beans tomatoes, chipotle (to taste), broth, and brown sugar. Bring to boil over high heat, reduce heat, cover and simmer for 25 min. Stir in cooked wheat berries and heat through, about 5 min more. Remove from heat . Serve in bowls garnished with fresh squeeze lime juice, cilantro, and diced avocado (sour cream and cheese too if you prefer)
