Serves : 2 loaves or 12 muffins & one large loaf
Ingredients:
3 cups flour
2 tsp Baking Soda
1 1/2 tsp cinnamon
1 tsp nutmeg
1/4 tsp allspice
3/4 tsp salt
1 (16oz) can Pumpkin
3/4 cup veg oil
2 1/4 cup sugar
4 eggs
2 cups peeled chopped Granny Smith Apples
for TOPPING:
1T Flour
5T sugar
1T cinnamon
1 T softened Marg
HEAT OVEN to 350 degrees
Sift flour, baking soda, cinnamon, nutmeg, allspice and salt together. Combine pumpkin , oil sugar and eggs and whisk until smooth. Add DRY ingredients and mix well. Fold in apples and spoon into 2 5x9 greased loaf pans or muffin pans.
TOPPING: Combine ingredients and mix until it resembles coarse meal. Sprinkle over batter.
Place in center rack of oven BREAD bake 50 minutes MUFFINS bake about 28-30 minutes . Cool for 45 minutes in pans , remove to wire rack to cool completely. Store in Fridge up to 1 week or freezer up to 1 month.
