Beef Enchiladas from Ashley

1 pound ground beef
1 can refried beans
1 can enchilada sauce (I use mild La Victoria, but any is fine)
1 pk corn tortillas
1 pound mild cheddar cheese (or mexican blend) divided 1/3 & 2/3

Directions:1- Preheat oven to 375*
2-Brown beef in skillet over medium heat. When about 3/4 of the way done add a about 1/3 of the enchilada sauce and simmer until meat is cooked through and sauce is absorbed mostly.
3-Warm refried beans so they are spreadable.
4-pour remaining enchilada sauce in shallow dish & dredge tortillas in sauce.
5- Fill tortillas with the meat, beans and cheese. Roll and place in baking dish. (glass or metal, either will do fine).
6- Continue until pan is full and/or our of mixture. If there is leftover meat I add that on top of the enchiladas.
7- Sprinkle cheese over top of of enchiladas.
8- Cover with tin foil and bake until cheese is bubbly.
Remove foil last 5-10 minutes to allow cheese to brown a bit.
9- Serve w/ Spanish rice and veggie/salad.

This one is simple, quick and is SO GOOD! :)
