Mika's EASY Lemon Cake


1 Box Lemon or Yellow Cake Mix
4 Eggs
1 box instant lemon pudding mix
¾ cup water
¾ cup oil
Mix well. Pour into 9 X 12” pan. Cook until toothpick comes out of the center clean. While still hot, use a fork to poke holes in top of cake. Pour lemon glaze over top of hot cake.

Lemon Glaze: 2 cups powdered sugar3 tbsp water¼ cup lemon juice (Makes a very moist cake)
Preheat oven to 350 degrees. Bake for 35 minutes or until toothpick inserted in center comes out clean.

  1. I would suggest using the lemon cake mix. I made it with the yellow cake mix and it just wasn't what I remember. I was expecting more lemon flavor. It's good, just not AS GOOD. Still, I'll make it again. -Mika
