Veggie Tempura with Honey Mustard Sauce from Mika

1 ½ cup panko crumbs

¼ tsp salt

¼ cup all purpose flour

2 eggs, beaten

2 tbsp butter (melted)

Mixture of veggies: Mushrooms, small zucchini cut into strips, green beans, etc.

Combine panko and salt in med. Bowl. In large bowl toss veggies with flour. Dip into egg, then in panko. Place on greased cookie sheet, drizzle with butter. Bake at 450 for 9 minutes, stirring twice. Serve immediately with sauce.

Sauce:

1 cup Dijon mustard

2 tbsp honey
