Black Bean Tostadas from Nicole

Black Bean Tostadas
(A Rick Bayless recipe)
 
1 T vegetable oil
1 large can black beans
1/2 t cumin
1 t minced garlic
tostada shells
misc. toppings
 
Heat oil in skillet over medium-high heat.  Add entire can of beans, including juices.  Stir and mash until beans start to thicken, about 5-10 minutes.  Add garlic and cumin and mix well.  Beans should be thickened as though refried.
Toast shells in the oven about 5 minutes.
 
Spread beans over shells, and everyone builds their own tostada!  This would work for bean tacos too.  Maizie LOVES them!
 
Toppings: cheese, salsa, guacamole, sour cream, cilantro, lime, etc etc
