1 pkg frozen spinach (10 oz) well drained
1 lb cottage cheese
1 lb ricotta
12 oz (3 c.) mozzarella, shredded
¾ c. parmesan cheese, shredded
2 eggs, beaten
½ t. salt
½ t. nutmeg
½ t. ground pepper
1 box jumbo pasta shells
Cook pasta according to package directions, but not quite all the way as they will finish cooking in oven. Mix together all the ingredients and stuff shells with this mixture. Line up shells in a baking dish and top with pasta sauce of your choice (can be a red or alfredo sauce, with or without meat). Then garnish with shredded extra paremsean cheese. Cover and bake about 1 hr at 375. (remove foil half way through cooking time.)
